It’s mid-October and we are still getting tomatoes out of our garden! (that’s big news in Minnesota for this time of year) Many are turning red on the vine during this 2 week hot streak, but we also picked lots of green ones, put them in a paper bag, and set them in a cool dry place to ripen up. I think we’re on the last of the paper bags which I find scattered throughout our kitchen. It’s worked out really well, and as Rolf said as he checked a bag last night, “oooh! Christmas!”
My husband can eat tomatoes like apples. I can not. But, as seen here, I do love spaghetti, so the hundereds of tomatoes we’ve had this year has worked out well for me too.
Here are my 3 favorite things to do with home-grown tomatoes:
Caprese. Duh!
Peel, core, and freeze tomatoes for another day. Though I hate actually doing this, I love being able to use our own tomatoes for soup, sauce, or stew in the dead of winter.
Some good ol’ spaghetti sauce. Yum!
